You ask why a Hāngī or what is a – well
Experiencing a Hāngī is a great way to experience Māori culture, (and you don’t have to travel to New Zealand) its right here in CQ.


We are celebrating 4 years of Essence of Chi in Equine Leadership and would like to invite you (past student and family) to celebrate with the team a traditional hāngī cooking, food such as fish and kumara (sweet potato). As you can see will be cooked in a pit dug in the ground. We will add an assortment of protein and vegetables.

No, you not going to eat dirt. Below are Chef Hami ancient ingredients on how to make the oven.

2 day equine connection

Hangi Hole x 2 holes next to each other 1 metre gap
• 1200mm x 1200mm x 500mm (deep)
• Leave dirt in a pile near hole
1 Fire pit hole (one to burn fire/stones)
2 Food pit hole (transfer stones to this hole)
Required Equipment
• River Rocks / Rail tracks (many as possible)
• Potato sacks / plain old sheets / banana leaves (non-colour – many as possible)
• Wire baskets (as shown below) x2 Meat basket/Vege basket (Muslin cloth for vegetables)

The Hāngī is left in the ground for about three to four hours, depending on the amount of food. The result of this process is tender meat and delicious vegetables, infused with smoky, earthy flavours.
Delicious wholesome food is central to the spirit of manaakitanga (hospitality). This is a lifetime experience that sharing a feast cooked in a traditional Maori hāngī (earth oven), a centuries-old cooking method perfect for feeding a ECL crowd and bringing a community together.
